The Scout and Cellar fortified wine mixer called ‘The Grove’, is a great alternative to hard alcohol bases, to create light, refreshing cocktails. This recipe with basil and orange is the perfect compliment to the Citrus Salad with Prosciutto and Feta
3 Basil leaves
1 fl oz. Simple Syrup or sweetener of choice
3 fl oz. fresh Orange Juice
1.5 fl oz. ‘The Grove’
4 oz sparkling water (San Pelligrino works best)
Orange Twist to garnish
- Place the basil leaves in a glass with the simple syrup, ‘muddle’ with a pestle or spoon to release the mint essential oils.
- Add the orange juice, Country Road and top with sparkling water.
- Stir, add twist and enjoy!
Note: To make your own simple syrup dissolve one-part sugar and one-part water over low heat, bring to a gentle boil, remove from heat and allow to cool.
