Turkey Zucchini Patties

‘Healthy fast food’ is what I call these five ingredient easy to make turkey zucchini patties!

I’ve probably made hundreds of these delicious little bites over the years, for clients and for my family, and everyone loves these delicious turkey zucchini patties!

Turkey Zucchini Patties

All you need to whip up the recipe is one pound of ground turkey, a medium zucchini (or two small), herb such as cilantro or basil, a couple of stalks of green onion, and your seasoning of choice, that’s it!

Zucchini, the Versatile, Low Carb Star!

Zucchini, also known as courgette or summer squash, is in abundance in the summer season. This versatile, low calorie vegetable is the star that holds together this turkey zucchini patty recipe without eggs or breadcrumbs and makes the patties so juicy and delicious!

One recipe of these turkey zucchini patties will yield about eight patties, I’d recommend making double as they freeze really well, and are so useful as a snack or meal on the go.

Easy Turkey Zucchini Patties

Description

A favorite in my household, these turkey zucchini patties are a snap to make and a great snack to keep on hand.


Ingredients

Scale

1          Lb. ground Turkey

1          cup Zucchini, grated

2          stalks Green Onion, finely chopped

1/4       cup Cilantro, chopped

2          tsp. Cumin

2          tsp. Everyday Spice Blend

1          tsp. Salt

4          Tbsp. Ghee or Coconut Oil, for cooking


Instructions

  • Preheat oven to 400F
  • Place all ingredients in a bowl and mix well.
  • Heat a sauté pan to medium high, add a little fat, and using a large ice cream scoop with release handle, drop the patties directly into the pan, and gently flatten with a spatula.
  • Brown the patties, a few minutes on both sides.
  • Place on a baking tray and finish in the oven, 4 to 5 minutes
  • Prep Time: 10
  • Cook Time: 10
