A favorite in my household, these turkey zucchini patties are a snap to make and a great snack to keep on hand.
1 Lb. ground Turkey
1 cup Zucchini, grated
2 stalks Green Onion, finely chopped
1/4 cup Cilantro, chopped
2 tsp. Cumin
2 tsp. Everyday Spice Blend
1 tsp. Salt
4 Tbsp. Ghee or Coconut Oil, for cooking
- Preheat oven to 400F
- Place all ingredients in a bowl and mix well.
- Heat a sauté pan to medium high, add a little fat, and using a large ice cream scoop with release handle, drop the patties directly into the pan, and gently flatten with a spatula.
- Brown the patties, a few minutes on both sides.
- Place on a baking tray and finish in the oven, 4 to 5 minutes
