Chocolate Salami

Ginger, Apricot & Macadamia Chocolate Salami

A unique gift idea, this chocolate dessert looks like a salami! Ginger, apricot and macadamia are a delicious combination that looks gorgeous sliced.



12 oz The Good Chocolate Ginger Bar

4 oz Unsalted Butter

1/2 cup Macadamia Nuts, toasted

1/2 cup Gluten Free Cookies *

1/2 cup Dried Apricots

1/4 cup Crystalized Ginger

1 cup Powdered Sugar


Rough chop the chocolate, slice the butter and place all the ingredients in a double boiler, gently simmering.

Prepare the filling; rough chop the nuts, apricots and cookies, finely chop the ginger

Once the chocolate has melted, stir in the filling until combined, do not over stir.

Form the ‘salami’, this recipe will make one large salami or two smaller. Place the filling in a log shape on a piece of parchment paper, roll up and shape, tie the ends.

Place in the refrigerator until set, approximately three hours. Once set, unroll the chocolate salami and discard the parchment paper.

Place on baking sheet, and dust on all sides with powdered sugar. Using kitchen string, ‘tie’ the log to resemble salami (see video).

Roll and tie in fresh parchment paper and present in pretty basket or tray.
