Mojito Mint Melon Salad

A cool, crisp summer salad, the sweetness of the melon perfectly enhanced with tangy lime and cool mint.



1/2   medium Watermelon, peeled and cut into 1.5” cubes

1 medium Cantaloupe, peeled and cut into 1.5” cubes

1  Lime, cut in wedges for garnish

3  Sprigs Mint, for garnish

Simple Syrup Recipe:

1   cup raw Sugar

2  cups Water


2  Tbsp. Simple Syrup

1 tsp. liquid Stevia or Monk Fruit

1/4    cup fresh Lime Juice

1  Tbsp. Lime zest

1  Tbsp. Mint, fresh diced

1/4 tsp. Sea Salt


Prepare the simple syrup:

  • Place all the sugar and water in a saucepan and bring to a gentle simmer, stirring until all the sugar is dissolved.
  • Allow to cool, transfer to a container and keep in the fridge for further use.
  • Mix all the dressing ingredients together, and toss through the salad.
  • Allow to marinade one hour before serving, garnish with the extra lime wedges and mint.


Any combination of melons could be used for this salad.
